It's Time For Nettle Soup Again ...


I've been doing a lot of walking lately and can't help noticing the young nettles are pushing their way up through the ground.  Now is the time to start gathering them to make a delicious soup.

Collect them when they are about 3" - 4" high, anymore than that and they will have toughened up. 
Wear good strong gloves !
Give them a quick rinse under cold water, don't soak them.

Fry some chopped onions and crushed garlic until just beginning to soften
Add the nettles and cook down until soft
Pour in one pint of stock and leave to simmer for about 15/20 minutes
When cool, liquidise, reheat and enjoy !

Nettles are full of iron and vitamins.
This soup is best served with crusty bread and/or a dollop of thick cream or yoghurt.
A sprinkling of grated cheese adds protein.

It freezes beautifully, so make lots while you can and put it in the freezer.
